Recipe: Whole Wheat Sourdough Banana Bread
Ingredients:
* 1 cup (200g) whole wheat flour
* 1/2 cup (100g) all-purpose flour
* 1/4 cup (50g) granulated sugar
* 1/2 teaspoon salt
* 1/4 teaspoon instant yeast
* 1/2 teaspoon active sourdough starter (fed and ready to use)
* 3 ripe bananas, mashed
* 1 large egg
* 1 tablespoon melted unsalted butter
* 1 teaspoon vanilla extract
* 1/2 cup (60g) chopped walnuts or pecans (optional)
Instructions:
1. In a large mixing bowl, combine whole wheat flour, all-purpose flour, sugar, and salt. Whisk until well combined.
2. Create a well in the center of the flour mixture and add the instant yeast, sourdough starter, and 1/2 cup of warm water (around 100°F/38°C). Mix until a shaggy dough forms.
3. Add mashed bananas, egg, melted butter, and vanilla extract to the dough. Mix until well combined and a sticky dough forms.
4. If using nuts, fold them into the dough at this stage.
5. Cover the dough with plastic wrap or a damp towel and let it rest at room temperature (around 70°F/21°C) for 24 hours. This is the autolyse stage.
6. After the autolyse, add some gentle folds to the dough, then cover it again and let it rest for another 2 hours.
7. Preheat the oven to 375°F (190°C). Line a 9×5-inch loaf pan with parchment paper.
8. Gently shape the dough into a round or oblong shape and place it in the prepared loaf pan. Cover the pan with plastic wrap or a clean towel and let it rise for 2 hours, or until it has almost doubled in size.
9. Remove the plastic wrap or towel and bake the bread for 45-50 minutes, or until it's golden brown and sounds hollow when tapped on the bottom.
10. Remove the bread from the oven and let it cool on a wire rack for at least 1 hour before slicing.
