Creamy Chicken Hotpot
This comforting hotpot is packed with tender chicken, flavorful vegetables, and a rich and creamy sauce. Perfect for a cozy weeknight meal!
Ingredients:
- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken thighs, cut into bite-sized pieces
- 1 medium onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 1 tablespoon dried thyme
- 1/2 teaspoon dried rosemary
- 1/4 cup all-purpose flour
- 2 cups chicken broth
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- Salt and freshly ground black pepper, to taste
- Optional vegetables: 1 cup sliced mushrooms, 1 cup frozen peas
Cooking Guide:
- Heat olive oil in a large pot or Dutch oven over medium heat. Add chicken and cook until golden brown on all sides, about 5-7 minutes. Remove chicken from the pot and set aside.
- Add onion, carrots, and celery to the pot. Cook for 5-7 minutes, or until softened. Stir in garlic, thyme, and rosemary and cook for an additional minute.
- Sprinkle flour over the vegetables and stir to coat. Cook for 1 minute.
- Slowly whisk in chicken broth, scraping up any browned bits from the bottom of the pot. Bring to a simmer and cook for 5 minutes.
- Stir in heavy cream, Parmesan cheese, and parsley. Season with salt and pepper to taste.
- Return chicken to the pot and simmer for 5-7 minutes, or until cooked through.
- (Optional) If using additional vegetables, stir them in during the last few minutes of cooking.
- Serve hot with crusty bread or rice.
Tips:
- For a thicker sauce, whisk together a cornstarch slurry (1 tablespoon cornstarch mixed with 2 tablespoons water) and slowly add it to the pot until desired consistency is reached.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop over low heat.
- This recipe is easily customizable! Add your favorite vegetables, such as broccoli, mushrooms, or peas. You can also use chicken breasts instead of thighs, but be sure to adjust the cooking time to avoid overcooking.
- For a richer flavor, use full-fat chicken broth and heavy cream.
- You can also substitute half and half for the heavy cream to lighten it up a bit.
