Hot and Hearty Melty Cabbage Casserole
This casserole is a delicious and budget-friendly meal that’s perfect for a weeknight dinner. It’s packed with flavor and nutrients from the ground beef, cabbage, and melty cheese.
Ingredients:
- 1 tablespoon olive oil
- 1 pound ground beef
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1/2 teaspoon paprika
- 1/4 teaspoon cayenne pepper (optional)
- 1 (14.5-ounce) can diced tomatoes, undrained
- 8 cups shredded green cabbage
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- Salt and freshly ground black pepper, to taste
Cooking Guide:
- Preheat oven to 375°F (190°C). Grease a 9×13 inch baking dish.
- Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned. Drain any excess fat.
- Add onion and garlic to the skillet and cook for 1-2 minutes, or until softened. Stir in thyme, paprika, and cayenne pepper (if using).
- Add diced tomatoes with their juices and stir to combine.
- Add shredded cabbage to the skillet and stir to coat with the sauce. Season with salt and pepper to taste.
- Bring the mixture to a simmer, then reduce heat to low and cover. Cook for 10-15 minutes, or until the cabbage is softened but still slightly crisp.
- Transfer the mixture to the prepared baking dish. Top with shredded cheddar and mozzarella cheese.
- Bake for 15-20 minutes, or until the cheese is melted and bubbly.
Tips:
- For a vegetarian option, omit the ground beef and add an extra cup of chopped vegetables, such as mushrooms, bell peppers, or carrots, to the skillet with the onion and garlic.
- If you like your cabbage softer, increase the cooking time in step 6.
- You can use any type of cheese you like in this casserole. Monterey Jack, Gruyere, or a combination of cheeses would all work well.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven until heated through.
