Banana Bread Pudding Recipe
Ingredients:
* 4 cups stale banana bread, cut into 1-inch cubes
* 1/2 cup granulated sugar
* 1/2 cup unsalted butter, melted
* 2 large eggs
* 1/2 cup heavy cream
* 1 teaspoon vanilla extract
* 1/2 teaspoon ground cinnamon
* 1/4 teaspoon ground nutmeg
* 1/4 teaspoon salt
* 1 cup caramelized bananas (see note)
* 1 cup chopped walnuts or pecans (optional)
* Confectioners' sugar, for dusting
Instructions:
1. Preheat your oven to 350°F (180°C).
2. In a large mixing bowl, whisk together the sugar, melted butter, eggs, heavy cream, vanilla extract, cinnamon, nutmeg, and salt until well combined.
3. Add the cubed banana bread to the bowl and stir until the bread is evenly coated with the mixture.
4. Pour the mixture into a 9×13-inch baking dish and let it sit for 10-15 minutes to allow the bread to absorb the liquid.
5. Drizzle the caramelized bananas over the bread mixture and sprinkle with chopped nuts, if using.
6. Bake for 35-40 minutes or until the top is golden brown and the bread pudding is set.
7. Remove from the oven and let cool for 10-15 minutes before serving.
8. Dust with confectioners' sugar and serve warm.
