Cheeseburger Quesadillas with Special Sauce
These quesadillas are a fun twist on the classic burger, all wrapped up in a melty, cheesy goodness.
Ingredients:
- For the Quesadillas:
- 1 tablespoon olive oil
- 1/2 pound ground beef
- 1/2 onion, diced
- 1 teaspoon chili powder
- 1/2 teaspoon cumin
- Salt and pepper to taste
- 4 large flour tortillas
- 2 cups shredded cheddar cheese
- Optional: Chopped pickles, diced tomatoes, sliced jalapenos
- For the Special Sauce:
- 1/2 cup mayonnaise
- 2 tablespoons ketchup
- 2 tablespoons sweet relish
- 1 tablespoon yellow mustard
- 1 teaspoon Worcestershire sauce
- 1/4 teaspoon paprika
- Pinch of garlic powder
Cooking Guide:
- Make the Special Sauce: In a small bowl, whisk together mayonnaise, ketchup, sweet relish, mustard, Worcestershire sauce, paprika, and garlic powder. Set aside in the refrigerator.
- Cook the Beef: Heat olive oil in a large skillet over medium heat. Add the onion and cook until softened, about 5 minutes. Add the ground beef and cook, breaking it up with a spoon, until browned. Season with chili powder, cumin, salt, and pepper.
- Assemble the Quesadillas: Heat a griddle or large skillet over medium heat. Place one tortilla on the griddle. Sprinkle with 1/2 cup of shredded cheese. Top with cooked beef, then add any desired toppings like pickles, tomatoes, or jalapenos. Sprinkle with another 1/2 cup of cheese. Top with another tortilla.
- Cook the Quesadilla: Cook the quesadilla for 2-3 minutes per side, or until golden brown and the cheese is melted. Repeat with remaining tortillas and filling.
- Serve: Cut the quesadilla into wedges and serve immediately with the special sauce for dipping.
Tips:
- For a spicier quesadilla, add a pinch of cayenne pepper to the ground beef or special sauce.
- You can use any type of ground meat you like, such as ground turkey, chicken, or sausage.
- If you don’t have any cheddar cheese, you can use another type of melting cheese, such as Monterey Jack or pepper jack.
- To make sure your quesadilla gets nice and crispy, make sure your griddle or skillet is hot enough before adding the tortilla.
- You can also cook these quesadillas in a quesadilla maker if you have one.
- Leftover quesadillas can be stored in the refrigerator for up to 3 days. Reheat them in a skillet over medium heat until warmed through.
