Recipe: Chocolate Banana Bread Pudding
Ingredients:
For the bread pudding:
* 4 cups stale bread, cut into 1-inch cubes (white or whole wheat)
* 1/2 cup (1 stick) unsalted butter, melted
* 1 cup granulated sugar
* 2 large eggs
* 2 ripe bananas, mashed
* 1 teaspoon vanilla extract
* 1/2 teaspoon salt
* 1/2 cup semi-sweet chocolate chips
* 1 cup heavy cream or half-and-half
* 1/2 cup chopped walnuts or pecans (optional)
For the chocolate sauce:
* 1 cup semi-sweet chocolate chips
* 1/2 cup heavy cream or half-and-half
* 2 tablespoons unsalted butter
Instructions:
1. Preheat the oven to 350°F (175°C).
2. In a large mixing bowl, whisk together the melted butter, sugar, eggs, mashed bananas, vanilla extract, and salt.
3. Add the bread cubes to the bowl and toss until they are evenly coated with the wet ingredients.
4. Pour in the chocolate chips and chopped nuts (if using), and toss until they are well distributed.
5. Pour the mixture into a 9×13-inch baking dish and let it sit for 10-15 minutes to allow the bread to absorb the liquid.
6. Bake the bread pudding for 35-40 minutes, or until it's golden brown and set.
7. While the bread pudding is baking, prepare the chocolate sauce. In a small saucepan over medium heat, melt the chocolate chips, heavy cream, and butter, stirring constantly.
8. Remove the bread pudding from the oven and let it cool for a few minutes.
9. Pour the warm chocolate sauce over the bread pudding and serve immediately.
