* 2 large ripe bananas, sliced
* 1/2 cup granulated sugar
* 1/4 cup light brown sugar
* 1/2 cup heavy cream
* 1/2 cup whole milk
* 2 large eggs
* 1 teaspoon vanilla extract
* 1/4 teaspoon ground cinnamon
* 1/4 teaspoon ground nutmeg
* 1/4 teaspoon salt
* 1/2 cup caramel sauce (store-bought or homemade)
* 1/4 cup chopped walnuts or pecans (optional)
* 1 tablespoon unsalted butter, melted
Instructions:
1. Preheat your oven to 350°F (180°C).
2. In a large mixing bowl, whisk together the heavy cream, whole milk, eggs, sugar, light brown sugar, vanilla extract, cinnamon, nutmeg, and salt.
3. Add the cubed bread to the mixture and stir until the bread is evenly coated.
4. Fold in the sliced bananas and chopped nuts (if using).
5. Pour the mixture into a 9×13-inch baking dish and let it sit for 10-15 minutes to allow the bread to absorb the liquid.
6. Drizzle the caramel sauce evenly over the top of the bread mixture.
7. Bake for 40-45 minutes or until the top is golden brown and the pudding is set.
8. Remove from the oven and let it cool for 10-15 minutes before serving.
9. Slice and serve warm, topped with additional caramel sauce if desired.
Cook Time: 40-45 minutes
Prep Time: 15-20 minutes
Total Time: 55-65 minutes
Variations:
* For a twist on the classic, try substituting the bananas with apples or pecans with hazelnuts.
* Add a sprinkle of sea salt on top of the pudding before baking for a touch of saltiness.
* Use different types of bread, such as baguette or croissant, for varying textures and flavors.
* Replace the heavy cream with half-and-half or whole milk for a lighter version.
* Make it a personal pan by using a 6-inch ramekin and adjusting the cooking time accordingly.
