Recipe: Banana Bread Cake with Maple Syrup
Ingredients:
* 3 large ripe bananas, mashed
* 1 1/2 cups all-purpose flour
* 1 tsp baking powder
* 1/2 tsp baking soda
* 1/2 tsp salt
* 1 cup unsalted butter, softened
* 1 3/4 cups granulated sugar
* 2 large eggs
* 1 tsp vanilla extract
* 1/2 cup pure maple syrup
* 1 cup chopped walnuts or pecans (optional)
* Confectioners' sugar, for dusting (optional)
Instructions:
1. Preheat the oven to 350°F (180°C). Grease two 9×5-inch loaf pans and line the bottoms with parchment paper.
2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt.
3. In a large bowl, use an electric mixer to cream together the butter and sugar until light and fluffy, about 2 minutes.
4. Beat in the eggs one at a time, then stir in the mashed bananas and vanilla extract.
5. Gradually add the flour mixture to the wet ingredients, alternating with the maple syrup, beginning and ending with the flour mixture. Beat just until combined.
6. If using nuts, fold them into the batter with a rubber spatula.
7. Divide the batter evenly between the prepared pans and smooth the tops.
8. Bake for 55-60 minutes, or until a toothpick inserted into the center of each loaf comes out clean.
9. Remove the loaves from the oven and let them cool in the pans for 10 minutes before transferring them to a wire rack to cool completely.
10. Once cooled, dust with confectioners' sugar if desired.
