This recipe is a simple and flavorful way to cook salmon and broccolini on a single sheet pan. It’s perfect for a busy weeknight meal.

Ingredients:

  • 2 tablespoons olive oil
  • 1 pound broccolini, trimmed and cut into bite-sized pieces
  • 4 (6-ounce) salmon fillets, skin-on or skinless
  • Kosher salt and freshly ground black pepper, to taste
  • 1 lemon, sliced thin (optional)
  • 2 cloves garlic, minced (optional)
  • 1 tablespoon chopped fresh parsley (optional)

Cooking Guide:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. In a large bowl, toss broccolini with 1 tablespoon olive oil, salt, and pepper. Spread broccolini in an even layer on the prepared baking sheet.
  3. Pat salmon fillets dry with paper towels. Season both sides with salt and pepper. Place salmon fillets on top of the broccolini.
  4. (Optional) Arrange lemon slices over the salmon and sprinkle with minced garlic.
  5. Drizzle the remaining 1 tablespoon olive oil over the salmon and broccolini.
