Taco Bell Cheesy Fiesta Potatoes (Copycat Recipe)

These crispy potato bites smothered in cheesy nacho sauce are a delicious and easy recreation of the Taco Bell favorite.

Ingredients:

  • For the Potatoes:
    • 2 large russet potatoes
    • 2 tablespoons vegetable oil
    • 1 (1 ounce) packet taco seasoning
  • For the Cheesy Sauce:
    • 1/2 cup lite sour cream
    • 1 cup shredded cheddar cheese (or nacho cheese sauce)
    • 2 scallions, chopped (optional)
  • Salt and pepper to taste

Cooking Guide:

  1. Prep the Potatoes: Wash and dice the potatoes into bite-sized cubes. In a large bowl, toss the potatoes with vegetable oil and taco seasoning until evenly coated.

  2. Cook the Potatoes: There are two options for cooking:

  3. Make the Cheesy Sauce: While the potatoes are cooking, whisk together the sour cream, shredded cheese, and chopped scallions (if using) in a small bowl. Season with salt and pepper to taste.
