Tips and Variations:
* Replace the flax egg with 1/4 cup (60g) mashed carrots or 1/2 cup (60g) plain unsweetened applesauce.
* Add 1/2 teaspoon cinnamon, nutmeg, or cardamom for an extra boost of flavor.
* Replace the walnuts with 1/2 cup (30g) chopped pecans or hazelnuts.
* Make muffins instead of a loaf by dividing the batter evenly among 12 muffin cups. Bake for 20-25 minutes.
* Top with a dairy-free cream cheese frosting or a sprinkle of cinnamon sugar for added flavor and texture.
*To make a flax egg, mix 1 tablespoon ground flaxseed with 3 tablespoons water in a small bowl. Let it sit for 5 minutes to thicken before using in the recipe.
