Cranberry Chicken Skillet

One-Pan Cranberry Dijon Chicken Skillet

This recipe creates a flavorful and juicy chicken dish with a sweet and tangy cranberry Dijon sauce, all cooked in a single skillet for easy cleanup!

Ingredients:

  • 4 bone-in, skin-on chicken thighs (about 1.5 lbs)
  • 1 tablespoon olive oil
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup fresh cranberries
  • 1/2 cup chicken broth
  • 2 tablespoons Dijon mustard
  • 1 tablespoon honey
  • 1 teaspoon dried thyme
  • 1/2 teaspoon dried rosemary
  • Salt and freshly ground black pepper, to taste
  • Chopped fresh parsley, for garnish (optional)

Cooking Guide:

  1. Preheat oven to 400°F (200°C). Season chicken thighs generously with salt and pepper.
  2. Heat olive oil in a large oven-safe skillet over medium-high heat. Sear chicken skin-side down for 5-7 minutes, or until golden brown and crispy. Flip chicken and cook for an additional 2 minutes.
  3. Remove chicken from the skillet and set aside temporarily. Reduce heat to medium and add the onion to the pan. Cook for 3-4 minutes, or until softened. Add the garlic and cook for an additional minute, until fragrant.
  4. Stir in the cranberries, chicken broth, Dijon mustard, honey, thyme, and rosemary. Bring to a simmer and scrape up any browned bits from the bottom of the pan.
  5. Return the chicken thighs to the skillet, skin-side up, nestling them into the sauce. Transfer the entire skillet to the preheated oven.
  6. Bake for 15-20 minutes, or until the chicken is cooked through and the juices run clear when pierced with a fork.
  7. Once cooked, remove the skillet from the oven and let chicken rest for 5 minutes before serving. Garnish with chopped fresh parsley, if desired.

Tips:

  • For boneless, skinless chicken breasts, adjust the cooking time. Sear for 3-4 minutes per side, then bake for 10-12 minutes, or until cooked through.
  • If the sauce thickens too much while baking, add a splash of additional chicken broth or water to thin it out.
  • You can substitute dried cranberries for fresh cranberries in this recipe. Use about 1/3 cup of dried cranberries.
  • Serve this dish with mashed potatoes, rice, quinoa, or roasted vegetables for a complete meal.
