Banana Bread with Blueberry Topping Recipe

Ingredients:

For the Banana Bread:

* 3 large ripe bananas, mashed
* 1 1/2 cups all-purpose flour
* 1 tsp baking powder
* 1/2 tsp baking soda
* 1/2 tsp salt
* 1/4 cup unsalted butter, softened
* 1 cup granulated sugar
* 2 large eggs
* 1/2 tsp vanilla extract
* 1/2 cup chopped walnuts (optional)

For the Blueberry Topping:

* 1 cup fresh or frozen blueberries
* 1/4 cup granulated sugar
* 2 tbsp cornstarch
* 2 tbsp unsalted butter, melted

Instructions:

1. Preheat your oven to 350°F (180°C). Grease a 9×5-inch loaf pan and set it aside.
2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt.
3. In a separate bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, followed by the mashed bananas and vanilla extract.
4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. If using walnuts, fold them into the batter at this stage.
5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 55-60 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
6. While the banana bread is baking, prepare the blueberry topping. In a small saucepan, combine the blueberries, granulated sugar, and cornstarch. Cook over medium heat, stirring constantly, until the mixture thickens and the blueberries release their juice.
7. Remove the banana bread from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely.
8. Once the banana bread has cooled, drizzle the blueberry topping over the top. You can also sprinkle some extra blueberries on top for added flair.
