Recipe:

Ingredients:

* 3 large ripe bananas, mashed
* 1 1/2 cups (190g) all-purpose flour
* 1 tsp (5g) baking powder
* 1/2 tsp (2g) baking soda
* 1/2 tsp (2g) salt
* 1 cup (200g) granulated sugar
* 1/2 cup (115g) unsalted butter, softened
* 2 large eggs
* 1/2 cup (120ml) sour cream
* 1 tsp (5g) pure vanilla extract
* Chopped walnuts or pecans (optional)

Instructions:

1. Preheat your oven to 350°F (180°C). Grease a 9×5-inch loaf pan and set it aside.
2. In a medium bowl, whisk together flour, baking powder, baking soda, and salt. Set aside.
3. In a large mixing bowl, cream together sugar and butter until light and fluffy, about 2-3 minutes.
4. Beat in eggs one at a time, followed by mashed bananas and vanilla extract.
5. Gradually add the flour mixture to the wet ingredients, alternating with sour cream, beginning and ending with the flour mixture. Beat just until combined.
6. If using nuts, fold them into the batter at this stage.
7. Pour the batter into the prepared loaf pan and smooth the top.
