Recipe: Low Carb Banana Bread Gluten Free

Ingredients:

* 3 large ripe bananas, mashed
* 1/2 cup (115g) almond flour
* 1/4 cup (30g) granulated sweetener (such as Swerve or Erythritol)
* 1/2 teaspoon salt
* 1/2 teaspoon baking soda
* 1/2 teaspoon vanilla extract
* 3 large eggs
* 1/4 cup (60ml) melted coconut oil
* 1/4 cup chopped walnuts (optional)
* 1 teaspoon xanthan gum (optional)

Instructions:

1. Preheat the oven to 350°F (180°C) and grease a 9×5-inch loaf pan with coconut oil or cooking spray.
2. In a large mixing bowl, combine the mashed bananas, almond flour, granulated sweetener, salt, and baking soda. Mix well.
3. In a separate bowl, whisk together the eggs, melted coconut oil, and vanilla extract.
4. Add the wet ingredients to the dry ingredients and mix until well combined.
