Banana Bread Almond Flour Keto Recipe

Ingredients:

* 3 large ripe bananas, mashed
* 1/2 cup almond flour
* 1/4 cup granulated sweetener (such as Swerve or Erythritol)
* 1/4 cup melted coconut oil
* 3 large eggs
* 1/2 teaspoon baking powder
* 1/2 teaspoon salt
* 1/2 teaspoon vanilla extract
* 1/4 teaspoon xanthan gum (optional)

Instructions:

1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan with coconut oil.
2. In a large mixing bowl, combine the mashed bananas, almond flour, granulated sweetener, and melted coconut oil. Mix until well combined.
3. Add the eggs one at a time, mixing well after each addition.
4. Add the baking powder, salt, vanilla extract, and xanthan gum (if using), and mix until well combined.
5. Pour the batter into the prepared loaf pan and smooth the top.
6. Bake for 50-60 minutes, or until a toothpick inserted into the center of the bread comes out clean.
7. Remove the bread from the oven and let it cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
