Ingredients:
* 12 oz (340g) cheese-filled tortellini
* 1 large onion, diced

* 1 cup (250ml) chicken broth
* 1 cup (250ml) heavy cream
* 2 tbsp (30g) olive oil
* 1 tsp (5g) dried basil
* Salt and pepper, to taste
* Grated Parmesan cheese, for serving (optional)
Instructions:
1. Bring a large pot of salted water to a boil and cook the tortellini according to package instructions. Reserve 1 cup of pasta water before draining.
2. In a large skillet, heat the olive oil over medium-high heat. Add the diced onion and cook until translucent, about 3-4 minutes.
3. Add the minced garlic and cook for an additional minute, until fragrant.
4. Add the mixed vegetables and cook until tender, about 4-5 minutes.
5. Pour in the chicken broth and heavy cream, scraping the bottom of the pan to release any browned bits. Stir to combine and bring the mixture to a simmer.
6. Add the cooked tortellini to the skillet, tossing to coat with the sauce. If the sauce seems too thick, add a bit of the reserved pasta water.
