Recipe: Cheesy Sauce Tortellini Stuffed Pasta
Ingredients:
* 12 oz (340g) fresh cheese-filled tortellini (cheese ravioli)
* 2 tablespoons (30g) unsalted butter
* 2 cloves garlic, minced
* 1 cup (250ml) grated Parmesan cheese
* 1/2 cup (120ml) heavy cream
* 1/2 cup (120ml) mozzarella cheese, shredded
* Salt and pepper, to taste
* Fresh parsley, chopped (optional)
* Additional ingredients for variations:
+ Spinach and Feta: 1/2 cup (15g) chopped fresh spinach and 1/4 cup (30g) crumbled feta cheese
+ Mushroom and Prosciutto: 1/2 cup (30g) sliced mushrooms and 4 slices of prosciutto, diced
+ Pesto and Cherry Tomato: 2 tablespoons (30g) pesto and 1 pint (280g) cherry tomatoes, halved
Instructions:
1. Bring a large pot of salted water to a boil. Cook the tortellini according to package instructions until they float to the surface. Reserve 1 cup of pasta water before draining the tortellini.
2. In a large skillet, melt the butter over medium heat. Add the minced garlic and sauté for 1 minute until fragrant.
3. Pour in the heavy cream and bring the mixture to a simmer. Reduce the heat to low and let it cook for 2-3 minutes until slightly thickened.
4. Stir in the Parmesan and mozzarella cheese until melted and smooth. Season with salt and pepper to taste.
5. Add the cooked tortellini to the cheese sauce and toss to coat. If the sauce seems too thick, add a bit of the reserved pasta water.
6. Transfer the pasta to a serving dish and sprinkle with chopped parsley if desired. Add any additional ingredients for variations, if using.
