Grilled Chicken Burrito Bowls

Ingredients:

* 1 lb boneless, skinless chicken breasts, cut into 1-inch pieces
* 1/4 cup lime juice
* 2 cloves garlic, minced

* 1 cup cooked white rice
* 1 cup cooked black beans
* 1 cup frozen corn kernels, thawed
* 1 cup diced bell peppers (any color)
* 1/4 cup chopped fresh cilantro
* 2 tbsp avocado oil
* Salt and pepper to taste
* Optional toppings: diced tomatoes, shredded carrots, crumbled queso fresco, sour cream, salsa, shredded lettuce

Instructions:

1. In a large bowl, whisk together lime juice, garlic, and chili powder. Add the chicken and toss to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours.
