Recipe: Garlic Butter Shrimp with Linguine

Servings: 4

Ingredients:

* 1 pound large shrimp, peeled and deveined
* 4 tablespoons (1/2 stick) unsalted butter, softened
* 2 cloves garlic, minced
* 1/4 cup white wine (optional)
* 1/4 cup chicken broth
* 1 tablespoon freshly squeezed lemon juice
* 1 teaspoon dried parsley
* Salt and pepper, to taste
* 8 ounces linguine pasta
* Fresh parsley leaves, for garnish

Instructions:

1. Bring a large pot of salted water to a boil. Cook the linguine pasta according to package instructions until al dente. Reserve 1 cup of pasta water before draining the linguine.
2. In a large skillet, melt 2 tablespoons of butter over medium-high heat. Add the garlic and cook for 1-2 minutes, until fragrant.
3. Add the shrimp to the skillet and cook for 2-3 minutes per side, until pink and cooked through.
4. Remove the shrimp from the skillet and set aside.
5. Add the white wine (if using), chicken broth, and lemon juice to the skillet. Scrape up any browned bits from the bottom of the pan.
6. Return the shrimp to the skillet and toss to coat with the garlic butter sauce.
7. Add the cooked linguine pasta to the skillet, tossing to combine with the shrimp and sauce. If the sauce seems too thick, add some of the reserved pasta water.
8. Season with salt, pepper, and parsley.
9. Serve immediately, garnished with fresh parsley leaves.
