Clean Eating Meatloaf Recipe
This recipe offers a delicious and healthy twist on classic meatloaf, using lean protein and whole food ingredients.
Ingredients:
- 1 pound lean ground beef (90% lean or higher), or ground turkey
- 1/2 cup chopped onion
- 1/2 cup chopped mushrooms
- 1/2 cup chopped carrots (grated or finely chopped)
- 1/2 cup rolled oats
- 1 large egg
- 1/4 cup unsweetened almond milk, cashew milk, or low-fat milk
- 1 tablespoon olive oil
- 1 tablespoon dried herbs (Italian seasoning, thyme, or a blend)
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Cooking Guide:
- Preheat oven to 375°F (190°C). Lightly grease a loaf pan.
- In a large skillet, heat olive oil over medium heat. Add onions, mushrooms, and carrots. Sauté for 5-7 minutes, until softened. Let cool slightly.
- In a large bowl, combine ground meat, cooked vegetables, rolled oats, egg, milk, dried herbs, garlic powder, salt, and pepper. Mix gently but thoroughly until just combined.
- Form the mixture into a loaf shape in the prepared loaf pan.
- (Optional) For a glaze, whisk together 2 tablespoons ketchup, 1 tablespoon Dijon mustard, and 1 tablespoon honey or maple syrup. Brush the glaze over the top of the meatloaf in the last 15 minutes of baking.
- Bake for 50-60 minutes, or until internal temperature reaches 160°F (71°C). Let the meatloaf rest for 10 minutes before slicing and serving.
Tips:
- For extra moisture, add a handful of finely chopped fresh herbs like parsley or cilantro to the meatloaf mixture.
- To lighten up the recipe further, use ground turkey or chicken instead of beef.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 3 months.
- Serve with mashed sweet potatoes, roasted vegetables, or a simple salad for a complete and satisfying meal.
