Baked Mushroom Chicken
This recipe creates a flavorful and easy baked chicken dish with tender chicken breasts and savory mushrooms.
Ingredients:
- 4 boneless, skinless chicken breasts (around 1 pound)
- 1/4 cup all-purpose flour
- 3 tablespoons butter, divided
- 8 ounces sliced cremini mushrooms (or your favorite mushrooms)
- 1/2 cup chicken broth
- 1/4 teaspoon dried thyme
- 1/8 teaspoon garlic powder
- 1/8 teaspoon black pepper
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Salt, to taste
Cooking Guide:
- Preheat your oven to 400°F (200°C). Lightly grease a 9×13 inch baking dish.
- Season the chicken breasts with salt. Dredge each breast in the flour, coating evenly.
- Melt 2 tablespoons of butter in a large skillet over medium heat. Cook the chicken breasts for 3-4 minutes per side, or until golden brown. Transfer the browned chicken to the prepared baking dish.
- Add the remaining 1 tablespoon of butter to the skillet. Add the sliced mushrooms and cook for 5-7 minutes, or until softened and slightly golden.
- In a small bowl, whisk together the chicken broth, thyme, garlic powder, and black pepper. Pour this mixture over the mushrooms in the skillet. Bring to a simmer and scrape up any browned bits from the bottom of the pan.
- Pour the mushroom mixture over the chicken breasts in the baking dish. Top with the shredded mozzarella cheese and grated Parmesan cheese.
- Bake in the preheated oven for 20-25 minutes, or until the chicken is cooked through and the juices run clear when pierced with a fork. The cheese should be melted and bubbly.
Tips:
- For thicker and more flavorful sauce, whisk a tablespoon of flour into the pan drippings after removing the chicken. Cook for a minute, then whisk in the chicken broth and seasonings.
- If your chicken breasts are thin, pound them slightly thinner with a meat mallet to ensure even cooking.
- For a richer flavor, swap the chicken broth with white wine or a combination of broth and wine.
- Get creative with herbs! Try adding a pinch of rosemary or oregano to the chicken or mushroom mixture.
- Want a crispy topping? After adding the cheese, broil the dish for a minute or two at the end of cooking to achieve a golden brown crust. Be sure to watch closely to avoid burning the cheese.
- Serve this dish with rice, mashed potatoes, roasted vegetables, or your favorite side salad.
