White Chicken Chili Recipe

Creamy White Chicken Chili

This recipe is for a delicious and comforting white chicken chili. It’s packed with flavor and can be easily customized to your liking.

Ingredients:

  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 1 jalapeño pepper, seeded and finely chopped (optional)
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cumin
  • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
  • 5 cups low-sodium chicken broth
  • 1 (15.5 ounce) can cannellini beans, rinsed and drained
  • 1 (15.5 ounce) can Great Northern beans, rinsed and drained
  • 1 (4 ounce) can chopped green chiles
  • 1 cup heavy cream
  • 1/2 cup sour cream
  • Salt and freshly ground black pepper, to taste
  • Chopped fresh cilantro, for garnish (optional)

Cooking Guide:

  1. Heat olive oil in a large pot or Dutch oven over medium heat. Add onion and jalapeño (if using) and cook, stirring occasionally, until softened, about 5-7 minutes.
  2. Add garlic, oregano, and cumin and cook, stirring constantly, for about 30 seconds until fragrant.
  3. Add chicken pieces and cook until lightly browned on all sides, about 5-7 minutes.
  4. Pour in chicken broth, scraping up any browned bits from the bottom of the pot. Add cannellini beans, Great Northern beans, and chopped green chiles.
  5. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until chicken is cooked through and beans are tender.
  6. Remove pot from heat and stir in heavy cream and sour cream. Season with salt and pepper to taste.
  7. Serve hot, garnished with chopped fresh cilantro (optional).

Tips:

  • For a spicier chili: Add a pinch of cayenne pepper or red pepper flakes along with the oregano and cumin.
  • Make it ahead: This chili can be easily made ahead of time. Simply prepare the chili up to step 6, then let it cool completely. Store in the refrigerator for up to 3 days. Reheat over low heat on the stovetop, adding a splash of chicken broth or water if needed to thin it out.
  • Toppings: This chili is delicious with a variety of toppings. Some ideas include shredded cheese, chopped avocado, sliced green onions, sour cream, tortilla chips, or a dollop of Greek yogurt.
  • Chicken: You can use cooked, shredded chicken from a rotisserie chicken to save time.
  • Beans: Feel free to experiment with different types of beans, such as pinto beans, black beans, or chickpeas.
  • Vegetarian option: Omit the chicken and add an extra can of beans for a vegetarian chili.
