**Hot Honey Salmon Bites Recipe**

* 1 cup (240 ml) pure honey
* 1 tsp (5g) sriracha sauce

**Step 1: Make the Hot Honey**

1. In a small saucepan, combine the honey, sriracha sauce, and a pinch of salt. Heat over medium heat, whisking constantly, until the honey dissolves and the mixture reaches a simmer.
2. Reduce heat to low and let the mixture cook for about 5 minutes, or until it thickens slightly and reaches a temperature of 180°F (82°C) on a candy thermometer.
3. Remove from heat, let cool, and store in an airtight container at room temperature for up to 1 month.

**Step 2: Preparing the Salmon Bites**

1. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a shallow dish, mix together the panko breadcrumbs, melted butter, and a pinch of salt and pepper. Set aside.
