This recipe brings the restaurant-style flavors of hibachi to your home kitchen, featuring tender chicken and savory fried rice.

Ingredients:

  • For the Hibachi Chicken:
    • 1 pound boneless, skinless chicken breasts, cut into bite-sized pieces
    • 1 tablespoon soy sauce
    • 1 tablespoon oyster sauce (optional)
    • 1 tablespoon cornstarch
    • 1/2 teaspoon sesame oil
    • 1/2 teaspoon freshly ground ginger
    • 1 clove garlic, minced
    • 1 tablespoon vegetable oil
  • For the Fried Rice:
    • 2 tablespoons vegetable oil
    • 2 large eggs, beaten
    • 1/2 cup frozen peas
    • 1/2 cup chopped carrots
    • 1/2 cup chopped onion
    • 4 cups cooked white rice (cold or day-old is preferred)
    • 2 tablespoons soy sauce
    • 1 tablespoon butter

Cooking Guide:

  1. Marinate the Chicken: In a bowl, combine chicken, soy sauce, oyster sauce (if using), cornstarch, sesame oil, ginger, and garlic. Let marinate for at least 15 minutes, or up to 30 minutes for extra flavor.
  2. Cook the Chicken: Heat vegetable oil in a large skillet or wok over high heat. Add the chicken and cook, stirring frequently, until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
  3. Make the Fried Rice: In the same skillet, heat additional vegetable oil. Add the eggs and scramble until cooked through, about 2 minutes. Push the eggs to the side of the pan.
  4. Add Vegetables: Add peas, carrots, and onion to the empty side of the pan and cook until softened, about 3-4 minutes. Stir in the cooked rice and soy sauce.
  5. Combine and Season: Combine the cooked chicken and scrambled eggs with the fried rice mixture. Cook for another 1-2 minutes, stirring constantly, until heated through. Season with additional soy sauce to taste, if desired.
