Ingredients:

  • 1 tablespoon avocado oil, or olive oil
  • 6 cloves fresh garlic, peeled and crushed
  • 1 pound sirloin steak, cut into bite-sized pieces (about 1-inch cubes)
  • Sea salt, to taste
  • 2 tablespoons clarified butter or ghee
  • 1 tablespoon chopped fresh parsley
  • 1 tablespoon chopped chives (optional)

Cooking Guide:

  1. Heat the oil in a large heavy skillet over medium-high heat.
  2. Add the crushed garlic and cook for 1 minute, until fragrant. Be careful not to burn the garlic, as it will turn bitter.
  3. Add the steak bites to the pan in a single layer. Sear each side for 3-4 minutes, or until browned. You may need to work in batches depending on the size of your pan. Don’t overcrowd the pan, or the steak will steam instead of sear.
  4. Once the steak bites are seared to your liking, reduce the heat to medium-low.
  5. Add the clarified butter or ghee to the pan and swirl to coat the steak and garlic.

  8. Remove the pan from the heat and stir in the chopped parsley and chives.
