Mashed Cauliflower with Parmesan and Chives
Mashed cauliflower is a delicious and healthy alternative to mashed potatoes. It’s lighter but still creamy and flavorful, making it a perfect side dish for any occasion. This recipe with Parmesan cheese and chives adds a touch of elegance and freshness.
Ingredients:
- 1 head of cauliflower, cut into florets
- 2 cups chicken broth
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh chives
- Salt and freshly ground black pepper
Cooking Guide:
- Add the cauliflower florets to a saucepan with the chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the cauliflower is tender.
- Drain the cauliflower, reserving about 1/4 cup of the broth. Transfer the cauliflower to a food processor and puree until smooth, adding reserved broth as needed to achieve desired consistency.
- In a bowl, combine the mashed cauliflower with Parmesan cheese, chives, salt, and pepper. Stir well to combine and serve warm.
Tips:
- For extra creaminess, add a tablespoon of butter or cream cheese with the Parmesan cheese.
- Roast the cauliflower florets for 20-25 minutes at 400°F (200°C) for a deeper flavor before adding them to the broth.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in a saucepan or microwave until warmed through.
