Ingredients:

  • 1 head of cauliflower, cut into florets
  • 2 cups chicken broth
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh chives
  • Salt and freshly ground black pepper

Cooking Guide:

  1. Add the cauliflower florets to a saucepan with the chicken broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes, or until the cauliflower is tender.
  2. Drain the cauliflower, reserving about 1/4 cup of the broth. Transfer the cauliflower to a food processor and puree until smooth, adding reserved broth as needed to achieve desired consistency.
