Easy Tomato Soup and Grilled Cheese

Ingredients:
For the Tomato Soup:
- 1 tablespoon olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 (28 ounce) can crushed tomatoes
- 2 cups chicken broth
- 1/2 teaspoon dried oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup heavy cream (optional)
For the Grilled Cheese:
- 4 slices bread
- 4 slices cheese (your favorite, such as cheddar or mozzarella)
- Butter
Instructions:
For the Tomato Soup:
- Heat olive oil in a medium saucepan over medium heat. Add onion and cook until softened, about 5 minutes.
- Stir in garlic and cook for 30 seconds more.
- Add crushed tomatoes, chicken broth, oregano, salt, and pepper. Bring to a simmer and reduce heat to low. Let simmer for 15-20 minutes for richer flavor.
- If desired, stir in heavy cream for a creamier soup.
For the Grilled Cheese:
- Butter one side of each bread slice.
- Place two slices of bread, buttered side down, in a skillet over medium heat.
- Top each with cheese.
- Place remaining bread slices, buttered side up, on top of the cheese.
- Cook until golden brown and cheese is melted, about 2-3 minutes per side.
