Ingredients:

  • 8 oz udon noodles
  • 12 oz thinly sliced beef (ribeye or sirloin)
  • 1/2 onion, thinly sliced
  • 1 carrot, julienned
  • 2 cloves garlic, minced
  • 1 inch piece of ginger, minced
  • 2 green onions, thinly sliced
  • 2 tablespoons soy sauce
  • 1 tablespoon mirin
  • 1 tablespoon sesame oil
  • 1 teaspoon honey
  • 1/2 teaspoon red pepper flakes (optional)
  • Sesame seeds, for garnish

Instructions:

  1. Prepare the beef: In a medium bowl, combine beef, soy sauce, mirin, sesame oil, honey, and red pepper flakes. Marinate for at least 15 minutes or up to overnight.
  2. Cook the udon: Cook udon noodles according to package directions. Drain and rinse with cold water to prevent sticking.
  3. Stir-fry: Heat a large skillet or wok over medium-high heat. Add a tablespoon of oil and stir-fry beef until browned. Remove from pan and set aside.
  4. Sauté vegetables: Add the onion, carrot, garlic, and ginger to the same skillet and cook until softened.
