Easy Potato Noodles
Craving noodles but looking for a fun twist? These potato noodles are a delicious and simple alternative made with just a few ingredients. They have a wonderful chewy texture and can be dressed up with your favorite sauce for a satisfying and unique meal.

- 2 large russet potatoes
- 1 cup potato starch
- 1/2 teaspoon salt

Mash and Mix: Using a potato masher or ricer, mash the potatoes until smooth. Add the potato starch and salt, and mix well with a spoon until a soft dough forms. If the dough feels too sticky, add a little more potato starch, one tablespoon at a time, until it becomes manageable.

Shape the Noodles: Lightly dust a work surface with potato starch. Divide the dough into 4 equal pieces. Roll each piece into a long rope about 1/2 inch thick. Using a sharp knife, cut the ropes into noodle-shaped pieces, about 2-3 inches long.

Cook the Noodles: Bring a large pot of salted water to a boil. If desired, add a drizzle of neutral oil to prevent sticking. Gently drop the potato noodles into the boiling water and cook for 2-3 minutes, or until they float to the surface. Drain the noodles and rinse them briefly under cold water to stop the cooking process.
