Easy Lemon Chicken with Garlic Lemon Sauce

This recipe is perfect for a weeknight meal. It’s simple to prepare, uses pantry staples, and is bursting with bright lemon flavor.

Ingredients:

  • 4 boneless, skinless chicken breasts (or thighs)
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper, to taste
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon garlic powder
  • 1/4 cup all-purpose flour
  • 1 cup chicken broth
  • 1/2 cup dry white wine (or additional chicken broth)
  • 2 tablespoons lemon juice
  • 2 tablespoons butter
  • 2 cloves garlic, minced
  • 1/4 cup chopped fresh parsley (optional)

Cooking Guide:

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish.
  2. Pat the chicken breasts dry with paper towels. Season both sides with salt, pepper, oregano, and garlic powder.
  3. Dredge the chicken in flour, shaking off any excess.
  4. Heat olive oil in a large oven-safe skillet over medium heat. Add the chicken breasts and cook for 3-4 minutes per side, or until golden brown.
  5. Transfer the chicken to the prepared baking dish.
  6. In the same skillet, whisk together chicken broth, white wine (or additional broth), and lemon juice. Bring to a simmer, scraping up any browned bits from the bottom of the pan.
  7. Stir in the butter and garlic, and cook for another minute.
  8. Pour the lemon sauce over the chicken in the baking dish.
  9. Bake for 15-20 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).
  10. Garnish with chopped fresh parsley (optional) and serve immediately.

Tips:

  • For thicker sauce, whisk together 1 tablespoon cornstarch and 2 tablespoons cold water to form a slurry. Add the slurry to the pan with the lemon sauce and cook for 1-2 minutes, or until thickened.
  • If you don’t have white wine, you can substitute it with an equal amount of chicken broth.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • This recipe can be easily doubled or tripled to feed a crowd.
  • You can use bone-in, skin-on chicken breasts or thighs for a more flavorful dish. Just be sure to adjust the cooking time accordingly. Bone-in chicken will take longer to cook through.
  • For a richer sauce, you can use heavy cream instead of butter.
