Beef and Broccoli with the Best Sauce
This recipe delivers tender beef, crisp-tender broccoli, and a flavorful sauce that will rival your favorite takeout.
Ingredients:
- For the Beef:
- 1 pound flank steak, thinly sliced against the grain
- 1 tablespoon cornstarch
- 1 tablespoon soy sauce
- 1/2 teaspoon freshly ground black pepper
- 2 tablespoons vegetable oil
- For the Broccoli:
- 1 pound broccoli florets
- 1/4 cup water
- For the Sauce:
- 1/2 cup low-sodium chicken broth
- 1/4 cup oyster sauce
- 1/4 cup soy sauce
- 1 tablespoon brown sugar
- 1 tablespoon rice vinegar
- 1 teaspoon cornstarch
- 1/2 teaspoon grated ginger
- 1 clove garlic, minced
- 1/4 teaspoon sesame oil
Cooking Guide:
- Marinate the Beef: In a bowl, combine the cornstarch, soy sauce, and black pepper. Add the sliced beef and toss to coat. Marinate for at least 15 minutes, or up to 30 minutes for extra tender beef.
- Cook the Broccoli: While the beef marinates, blanch the broccoli florets in a pot of boiling water for 2-3 minutes. Drain well and set aside.
- Prepare the Sauce: In a small bowl, whisk together the chicken broth, oyster sauce, soy sauce, brown sugar, rice vinegar, cornstarch, ginger, garlic, and sesame oil. Set aside.
- Cook the Beef: Heat the vegetable oil in a large skillet or wok over high heat. Add the marinated beef and cook, stirring constantly, for 2-3 minutes, or until browned. Remove the beef from the pan and set aside.
- Thicken the Sauce: Add the sauce mixture to the pan and bring to a simmer. Cook, stirring constantly, for 1-2 minutes, or until the sauce thickens.
- Assemble the Dish: Add the cooked broccoli and cooked beef back to the pan with the sauce. Toss to combine and heat through for another minute.
- Serve: Serve immediately over steamed rice and garnish with sesame seeds, if desired.
Tips:
- Flank Steak Alternative: You can substitute flank steak with skirt steak or even thinly sliced chicken breasts. Adjust the marinating time accordingly.
- Crisp-Tender Broccoli: Don’t overcook the broccoli. It should be tender but still have a slight bite.
- Sauce Consistency: If your sauce seems too thick, add a tablespoon or two of water to thin it out.
- Spicy Kick: For a touch of heat, add a pinch of red pepper flakes to the sauce.
- Extra Veggies: Feel free to add other vegetables to the stir-fry, such as sliced bell peppers, carrots, or snow peas.
