Healthy Meatloaf Muffins
These delicious mini meatloaves are a perfect healthy and fun weeknight meal! They’re packed with veggies, lean protein, and can be easily customized to your preferences.
Ingredients:
- 1 lb lean ground beef (or turkey)
- ½ cup diced bell pepper (any color)
- ½ cup diced onion
- ⅓ cup grated carrots
- 1 cup diced zucchini
- ½ cup rolled oats (or breadcrumbs)
- 1 large egg
- 1 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp dried oregano
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and pepper to taste
Cooking Guide:
- Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin with cooking spray.
- In a large bowl, combine ground meat, diced vegetables, oats, egg, ketchup, Worcestershire sauce, and seasonings. Mix well with your hands until everything is evenly incorporated. Be careful not to overmix.
- Divide the mixture evenly among the prepared muffin cups, packing it down gently.
- Bake for 20-25 minutes, or until the meatloaf muffins are cooked through and the juices run clear.
- Let cool slightly before serving.
Tips:
- For a richer flavor, use a mixture of ground beef and ground pork.
- Add ¼ cup of shredded cheese on top of each muffin tin cup before baking for a cheesy crust.
- Sneak in more veggies by adding finely chopped mushrooms or spinach to the mixture.
- These muffins freeze well! Once cool, place them in a single layer on a baking sheet and freeze for up to 3 months. Reheat from frozen at 350°F (175°C) for 15-20 minutes, or until heated through.
