These delicious mini meatloaves are a perfect healthy and fun weeknight meal! They’re packed with veggies, lean protein, and can be easily customized to your preferences.

Ingredients:

  • 1 lb lean ground beef (or turkey)
  • ½ cup diced bell pepper (any color)
  • ½ cup diced onion
  • ⅓ cup grated carrots
  • 1 cup diced zucchini
  • ½ cup rolled oats (or breadcrumbs)
  • 1 large egg
  • 1 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried oregano
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste

Cooking Guide:

  1. Preheat your oven to 375°F (190°C) and grease a 12-cup muffin tin with cooking spray.
  2. In a large bowl, combine ground meat, diced vegetables, oats, egg, ketchup, Worcestershire sauce, and seasonings. Mix well with your hands until everything is evenly incorporated. Be careful not to overmix.
  3. Divide the mixture evenly among the prepared muffin cups, packing it down gently.
  4. Bake for 20-25 minutes, or until the meatloaf muffins are cooked through and the juices run clear.
  5. Let cool slightly before serving.

Tips:

  • For a richer flavor, use a mixture of ground beef and ground pork.
  • Add ¼ cup of shredded cheese on top of each muffin tin cup before baking for a cheesy crust.
  • Sneak in more veggies by adding finely chopped mushrooms or spinach to the mixture.
  • These muffins freeze well! Once cool, place them in a single layer on a baking sheet and freeze for up to 3 months. Reheat from frozen at 350°F (175°C) for 15-20 minutes, or until heated through.
