Honey Mustard Chicken Thighs

Ingredients:
- 4-5 bone-in, skin-on chicken thighs (or boneless, skinless if preferred)
- 1 teaspoon kosher salt
- 1/2 teaspoon black pepper
- 1/4 cup Dijon mustard
- 1/4 cup honey
- 1 tablespoon olive oil
- 3 garlic cloves, minced
- 1/2 teaspoon dried rosemary (or 2 teaspoons fresh)
- Optional: Chopped fresh parsley (for garnish)
Cooking Guide:
- Preheat your oven to 375°F (190°C).
- Pat the chicken thighs dry with paper towels. Season them generously with salt and pepper on all sides.
- In a small bowl, whisk together the Dijon mustard, honey, olive oil, garlic, and rosemary.
- Place the chicken thighs in a baking dish. Brush the honey mustard sauce evenly over the tops and sides of the chicken.
- Bake for 40-45 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C), preferably 175°F (79°C). You can check for doneness by inserting an instant-read thermometer into the thickest part of the thigh.
- (Optional) Broil for 1-2 minutes at the end for a crispier skin. Keep a close eye on the chicken under the broiler to avoid burning.
- Remove the chicken from the oven and let it rest for 5 minutes before serving. Spoon the pan sauce from the baking dish over the chicken.
- Garnish with chopped fresh parsley, if desired.
Tips:
- For extra crispy skin, let the chicken thighs sit uncovered in the refrigerator for 30 minutes to 1 hour before cooking. This will help to dry out the skin.
- You can adjust the amount of Dijon mustard to your taste preference. For a milder flavor, use less Dijon mustard.
- If you don’t have Dijon mustard, you can substitute with whole grain mustard.
- This recipe is easily doubled or tripled to feed a larger crowd.
