Honey Mustard Chicken Thighs

This recipe creates flavorful and tender honey mustard chicken thighs that are perfect for a weeknight meal. The crispy skin and sweet and tangy sauce make it a crowd-pleaser.

Ingredients:

  • 4-5 bone-in, skin-on chicken thighs (or boneless, skinless if preferred)
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/4 cup Dijon mustard
  • 1/4 cup honey
  • 1 tablespoon olive oil
  • 3 garlic cloves, minced
  • 1/2 teaspoon dried rosemary (or 2 teaspoons fresh)
  • Optional: Chopped fresh parsley (for garnish)

Cooking Guide:

  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken thighs dry with paper towels. Season them generously with salt and pepper on all sides.
  3. In a small bowl, whisk together the Dijon mustard, honey, olive oil, garlic, and rosemary.
  4. Place the chicken thighs in a baking dish. Brush the honey mustard sauce evenly over the tops and sides of the chicken.
  5. Bake for 40-45 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C), preferably 175°F (79°C). You can check for doneness by inserting an instant-read thermometer into the thickest part of the thigh.
  6. (Optional) Broil for 1-2 minutes at the end for a crispier skin. Keep a close eye on the chicken under the broiler to avoid burning.
  7. Remove the chicken from the oven and let it rest for 5 minutes before serving. Spoon the pan sauce from the baking dish over the chicken.
  8. Garnish with chopped fresh parsley, if desired.

Tips:

  • For extra crispy skin, let the chicken thighs sit uncovered in the refrigerator for 30 minutes to 1 hour before cooking. This will help to dry out the skin.
  • You can adjust the amount of Dijon mustard to your taste preference. For a milder flavor, use less Dijon mustard.
  • If you don’t have Dijon mustard, you can substitute with whole grain mustard.
  • This recipe is easily doubled or tripled to feed a larger crowd.
  • To make this recipe ahead of time, bake the chicken thighs as directed and then let them cool completely. Store them in an airtight container in the refrigerator for up to 3 days. Reheat in the oven before serving.
  • You can also serve this dish with your favorite side dishes, such as roasted vegetables, mashed potatoes, or rice.
