Easy Chicken and Broccoli Stir Fry
This is a quick and flavorful stir-fry recipe that’s perfect for a weeknight meal.
Ingredients:
- 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 2 tablespoons cornstarch
- 1 tablespoon soy sauce
- 1 tablespoon vegetable oil
- 1 head of broccoli, cut into florets
- 2 cloves garlic, minced
- 1 teaspoon grated ginger
- 1/2 cup chicken broth (low-sodium preferred)
- 1 tablespoon oyster sauce (optional)
- 1 tablespoon brown sugar
- 1 teaspoon toasted sesame oil
- Salt and freshly ground black pepper, to taste
Cooking Guide:
- Marinate the chicken: In a bowl, combine the chicken, cornstarch, and soy sauce. Toss to coat and marinate for at least 15 minutes, or up to 30 minutes for extra tender chicken.
- Prepare the broccoli: While the chicken marinates, wash and cut the broccoli florets into bite-sized pieces.
- Heat the wok: Heat the vegetable oil in a large wok or skillet over high heat.
- Cook the chicken: Add the chicken to the pan and cook for 3-5 minutes per side, or until golden brown and cooked through. Remove the chicken from the pan and set aside on a plate.
- Stir-fry the broccoli: Add the broccoli florets to the pan and cook for 3-5 minutes, or until crisp-tender.
- Make the sauce: In a small bowl, whisk together the chicken broth, oyster sauce (if using), brown sugar, and sesame oil.
- Assemble the stir-fry: Push the broccoli to the side of the pan and add the garlic and ginger to the empty space. Sauté for 30 seconds, until fragrant.
- Thicken the sauce: Pour the sauce mixture into the pan and bring to a simmer. Stir in a cornstarch slurry (mix 1 teaspoon cornstarch with 1 tablespoon water) to thicken the sauce.
- Combine and serve: Return the cooked chicken to the pan and toss with the broccoli and sauce until heated through. Season with salt and black pepper to taste. Serve immediately over rice or noodles.
Tips:
- To save time, you can use pre-cut chicken and broccoli florets.
- If you don’t have oyster sauce, you can substitute with an additional tablespoon of soy sauce.
- For a spicier stir-fry, add a pinch of red pepper flakes to the sauce.
