Grilled Chicken Kabobs

These kabobs are a perfect summer grilling recipe! They’re flavorful, easy to make, and can be customized with your favorite vegetables.

Ingredients:

  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 1/2 cup plain yogurt
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 tablespoon soy sauce
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • Salt and freshly ground black pepper, to taste
  • 1 bell pepper (red, yellow, or orange), cut into 1-inch squares
  • 1 red onion, cut into 1-inch wedges
  • 1 zucchini, cut into 1-inch slices
  • Wooden skewers (soaked in water for at least 30 minutes)

Cooking Guide:

  1. Marinate the chicken: In a large bowl, whisk together yogurt, olive oil, lemon juice, soy sauce, oregano, garlic powder, onion powder, paprika, salt, and pepper. Add the chicken cubes and toss to coat. Cover the bowl and refrigerate for at least 30 minutes, or up to 4 hours.
  2. Preheat the grill: Preheat your grill to medium-high heat (about 400°F).
  3. Assemble the kabobs: Thread the chicken cubes, bell pepper pieces, red onion wedges, and zucchini slices onto the soaked skewers, alternating ingredients for even cooking.
  4. Grill the kabobs: Grill the kabobs for 8-10 minutes per side, or until the chicken is cooked through and the vegetables are tender-crisp. Brush the kabobs with leftover marinade occasionally while grilling for added flavor.
  5. Serve: Serve the kabobs immediately with your favorite dipping sauce, such as yogurt sauce, tzatziki sauce, or chimichurri sauce.

Tips:

  • For chicken breasts that cook more evenly, pound them slightly with a meat mallet to an even thickness.
  • If you don’t have wooden skewers, you can use metal skewers. Just be sure to soak the metal skewers in water for at least 30 minutes to prevent them from burning on the grill.
  • To prevent the kabobs from sticking to the grill, lightly oil the grates before grilling.
  • You can add other vegetables to the kabobs, such as mushrooms, cherry tomatoes, or pineapple chunks.
  • Leftover grilled chicken kabobs can be stored in an airtight container in the refrigerator for up to 3 days.
