Slow Cooker BBQ Chicken

This recipe is a breeze to throw together and perfect for a busy weeknight. The slow cooker does all the work, resulting in tender, flavorful BBQ chicken that can be enjoyed in various ways.

Ingredients:

  • 3 lbs boneless, skinless chicken breasts (about 5-6 breasts)
  • 1 1/2 cups BBQ sauce (your favorite brand or a homemade version)
  • 1/2 medium onion, grated (with its juice)
  • 1 tablespoon olive oil
  • 1 tablespoon Worcestershire sauce
  • 2 tablespoons brown sugar
  • 1 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Cooking Guide:

  1. Combine the olive oil, Worcestershire sauce, brown sugar, garlic powder, smoked paprika, salt, and pepper in a small bowl.
  2. Place the chicken breasts in the bottom of your slow cooker.
  3. Pour the BBQ sauce over the chicken, then sprinkle the spice mixture on top. Toss the chicken to coat it evenly with the sauce and spices.
  4. Grate the onion directly into the slow cooker with its juice.
  5. Cover the slow cooker and cook on LOW for 6-7 hours or on HIGH for 3-4 hours, or until the chicken is cooked through and shreds easily with two forks.

Tips:

  • For thicker BBQ sauce, remove the chicken from the slow cooker after it’s cooked through. Shred the chicken and return it to the pot. Turn the slow cooker to HIGH and cook uncovered for 30 minutes, allowing the sauce to thicken.
  • Want a smoky flavor? Add a teaspoon of liquid smoke to the sauce mixture.
  • This recipe is easily customizable. Add some chopped red onion or bell pepper for extra veggies. If you like things spicy, throw in a chopped jalapeno or a pinch of cayenne pepper.
  • Leftover BBQ chicken can be used in various dishes throughout the week. Pile it on buns for sandwiches, serve it over rice or mashed potatoes, or use it in tacos, nachos, or salads.
