This recipe is perfect for a quick and delicious weeknight meal. It’s packed with flavor and comes together in under 30 minutes.

Ingredients:

  • 2 tablespoons sesame oil
  • 2 tablespoons vegetable oil
  • 1 pound medium shrimp, peeled and deveined (thawed, if frozen)
  • 1 cup frozen peas and carrots
  • ½ cup frozen corn
  • 2 cloves garlic, minced
  • 3 large eggs, lightly beaten
  • 4 cups cooked, cold rice (preferably leftover from the night before)
  • ½ cup chopped green onions
  • 3 tablespoons soy sauce
  • Salt and pepper to taste

Cooking Guide:

  1. Heat the oils: In a large wok or skillet, heat the sesame oil and vegetable oil over medium-high heat.
  2. Cook the shrimp: Add the shrimp and cook for 2-3 minutes, or until pink and opaque. Remove the shrimp from the pan and set aside.
  3. Sauté the vegetables: Add the frozen peas, carrots, and corn to the pan and cook for 3-4 minutes, or until heated through.
  4. Scramble the eggs: Push the vegetables to one side of the pan. Add the beaten eggs to the empty side and scramble them until cooked through.
  5. Combine everything: Add the cooked rice, cooked shrimp, and chopped green onions to the pan. Stir-fry for 2-3 minutes, or until the rice is heated through.
  6. Season and serve: Drizzle with soy sauce and season with salt and pepper to taste. Serve immediately.

Tips:

  • Use cold, cooked rice for best results. Cold rice fries better and prevents the dish from becoming mushy. If you don’t have leftover rice, cook fresh rice and spread it out on a baking sheet to cool quickly before using.
  • Don’t overcook the shrimp. Shrimp cooks quickly and can become rubbery if overcooked.
  • Feel free to add other vegetables you like, such as chopped bell peppers, broccoli florets, or water chestnuts.
  • For a spicier flavor, add a pinch of red pepper flakes or sriracha to the pan with the vegetables.
  • You can substitute cooked chicken or tofu for the shrimp in this recipe.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
