Ingredients:

  • 2 large eggs
  • 1/3 cup all-purpose flour (or cornstarch or potato starch for gluten-free)
  • 4 oz shredded mozzarella cheese
  • 1/4 cup grated parmesan cheese (optional)
  • 1/2 cup chopped onion
  • 1/4 cup chopped fresh herbs (such as parsley, chives, or dill)
  • 1 tablespoon olive oil
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Cooking Guide:

  1. In a large bowl, combine the diced chicken, eggs, flour, cheeses, onion, herbs, garlic powder, salt, and pepper. Mix well until everything is evenly distributed.
  2. Heat olive oil in a large skillet over medium heat. Once hot, scoop out the chicken mixture by 1/4 cupfuls and flatten slightly into patties.
