Cheesy Chicken Fritters
These fritters are a fun and flavorful way to enjoy chicken. They’re packed with protein and cheese, making them a satisfying appetizer, lunch, or dinner.
Ingredients:
- 1 1/2 lbs boneless, skinless chicken breasts, diced (see how to dice chicken breasts)
- 2 large eggs
- 1/3 cup all-purpose flour (or cornstarch or potato starch for gluten-free)
- 4 oz shredded mozzarella cheese
- 1/4 cup grated parmesan cheese (optional)
- 1/2 cup chopped onion
- 1/4 cup chopped fresh herbs (such as parsley, chives, or dill)
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Cooking Guide:
- In a large bowl, combine the diced chicken, eggs, flour, cheeses, onion, herbs, garlic powder, salt, and pepper. Mix well until everything is evenly distributed.
- Heat olive oil in a large skillet over medium heat. Once hot, scoop out the chicken mixture by 1/4 cupfuls and flatten slightly into patties.
- Fry the fritters for 3-5 minutes per side, or until golden brown and cooked through. You can cut a fritter in half to check if the chicken is cooked through.
- Drain the fritters on paper towels to remove excess oil.

Tips:
