Avocado Chicken Salad Recipe
This refreshing and flavorful salad is perfect for a light lunch or a quick dinner.
Ingredients:
- 2 cups cooked, shredded chicken (rotisserie chicken works great here!)
- 2 ripe avocados
- 1/4 cup chopped red onion
- 1/4 cup chopped fresh cilantro
- 2 tablespoons lime juice
- 1/2 teaspoon garlic powder (optional)
- 1/4 cup mayonnaise (or more to taste)
- Salt and freshly ground black pepper, to taste
Cooking Guide:
- Prep the Ingredients: Shred the cooked chicken and dice the avocado, red onion, and cilantro.
- Make the Dressing: In a small bowl, whisk together the lime juice, garlic powder (if using), and mayonnaise. Season with salt and pepper to taste.
- Assemble the Salad: In a large bowl, combine the shredded chicken, diced avocado, red onion, and cilantro. Pour the dressing over the salad and toss gently to coat all ingredients.
- Serve: Enjoy the avocado chicken salad on its own, on a bed of lettuce, or stuffed into whole wheat bread for a delicious sandwich.
Tips:
- For a creamier salad: Add a bit more mayonnaise, but be mindful not to overpower the avocado’s flavor.
- Add a crunch: For some added texture, you can throw in 1/2 cup of chopped celery or grapes.
- Spice it up: If you like a little kick, add a diced jalapeno or a teaspoon of your favorite hot sauce to the dressing.
- Make it ahead: This salad can be stored in the refrigerator for up to a day. However, the avocado may brown slightly. To prevent browning, toss the avocado with a bit of lime juice before adding it to the salad.
- Guacamole lovers rejoice! If you have leftover mashed avocado, you can use it in place of some of the mayonnaise in this recipe.
