Hearty Vegetable Beef Soup
This classic vegetable beef soup is packed with flavor and tender beef. It’s a perfect comfort food for a chilly day!
Ingredients:
- 1 tablespoon olive oil
- 1 pound beef stew meat, cut into 1-inch cubes
- 1 medium onion, chopped
- 3 carrots, peeled and diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 (14.5-ounce) can diced tomatoes, undrained
- 4 cups chopped potatoes (russet or Yukon Gold)
- 1 cup frozen peas
- 1 cup frozen corn
- 2 bay leaves
- 1 teaspoon dried thyme
- Salt and freshly ground black pepper, to taste
Cooking Guide:
- Brown the beef: Heat olive oil in a large pot or Dutch oven over medium-high heat. Season beef cubes with salt and pepper. Add the beef in batches and cook until browned on all sides. Transfer browned beef to a plate.
- Sauté the vegetables: In the same pot, add the onion, carrots, and celery. Cook, stirring occasionally, for 5-7 minutes, or until softened. Add the garlic and cook for another minute, until fragrant.
- Simmer the soup: Add the beef broth, diced tomatoes (with their juices), potatoes, peas, corn, bay leaves, and thyme to the pot. Bring to a boil, then reduce heat to low and simmer for 30-45 minutes, or until the beef and potatoes are tender.
- Season and serve: Season the soup with salt and pepper to taste. Remove the bay leaves before serving.

- Use leftover cooked beef: This soup is a great way to use leftover cooked beef. Simply shred or chop the beef and add it to the pot in step 3.
- Make it ahead: This soup can be made ahead of time and stored in the refrigerator for up to 3 days. Reheat gently over low heat.
- Add other vegetables: Feel free to add other vegetables to this soup, such as green beans, zucchini, or chopped mushrooms.
- Adjust the heartiness: For a thicker soup, mash some of the cooked potatoes in the pot before serving.
