Tender Chicken Fritters
These fritters are packed with juicy chicken and have a delightfully crispy exterior. They’re perfect for a quick and easy dinner or appetizer.
Ingredients:
- 1 1/2 pounds boneless, skinless chicken breasts (about 3 large)
- 2 large eggs
- 5 tablespoons mayonnaise (about 1/3 cup)
- 1/3 cup all-purpose flour (you can also use cornstarch or potato starch)
- 4 ounces shredded mozzarella cheese
- 1 1/2 tablespoons chopped fresh dill (optional)
- 1/2 teaspoon salt
- 1/8 teaspoon black pepper
Cooking Guide:
- Prep the Chicken: Dice the chicken breasts into bite-sized pieces, ideally between 1/3 inch to 1/2 inch thick. Set the chicken aside in a bowl.
- Make the Batter: In a separate bowl, whisk together the eggs, mayonnaise, flour, mozzarella cheese, dill (if using), salt, and pepper. Make sure everything is well combined.
- Combine and Cook: Add the diced chicken to the batter and mix gently until the chicken is evenly coated. Heat a large non-stick skillet over medium heat and add a thin layer of oil (about 1 tablespoon).
- Form and Fry: Scoop out the chicken mixture by 1/4 cup portions and gently flatten them slightly into patties. Fry the fritters for 3-4 minutes per side, or until golden brown and cooked through. You can adjust the heat slightly depending on how quickly the fritters are browning.
- Drain and Serve: Once cooked, transfer the fritters to a paper towel-lined plate to drain any excess oil. Serve immediately with your favorite dipping sauce, like ranch dressing, honey mustard, or hot sauce.
Tips:
- For extra crispy fritters, you can double coat the chicken by dredging it in a bit of flour before adding it to the batter.
- If the batter seems too thick, add a tablespoon or two of milk to thin it out slightly.
- Don’t overcrowd the pan when frying the fritters. This will help them cook evenly and get crispy.
- You can easily bake these fritters instead of frying them. Preheat your oven to 400°F (200°C) and bake the fritters for 15-20 minutes per side, or until cooked through.
- Leftover fritters can be stored in an airtight container in the refrigerator for up to 3 days. Reheat them gently in a skillet or oven until warmed through.
