Easy Ground Beef Tacos
These tacos are a classic weeknight meal that’s quick, customizable, and always satisfying.
Ingredients:
- 1 tablespoon olive oil
- 1 pound ground beef (80/20 or 90/10 lean)
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 teaspoons chili powder
- 1 teaspoon ground cumin
- 1/2 teaspoon paprika
- 1/4 teaspoon oregano
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup water (or low-sodium beef broth)
- 1 (15-oz) can diced tomatoes (optional)
- Taco shells (hard or soft)
- Your favorite taco toppings (shredded cheese, lettuce, chopped tomatoes, sour cream, salsa, avocado, guacamole)
Cooking Guide:
- Heat olive oil in a large skillet over medium heat. Add the ground beef and cook, breaking it up with a spoon, until browned throughout, about 5-7 minutes. Drain any excess fat.
- Add the onion and garlic to the skillet and cook until softened, about 3 minutes.
- Stir in the chili powder, cumin, paprika, oregano, salt, and pepper. Cook for an additional minute, allowing the spices to become fragrant.
- Pour in the water (or broth) and diced tomatoes (if using). Bring to a simmer and cook for 5 minutes, or until slightly thickened.
- Warm your taco shells according to package instructions.
- Assemble your tacos! Fill each shell with ground beef mixture and your favorite toppings.
Tips:
- Spice it up! For a kick, add a pinch of cayenne pepper or red pepper flakes with the other spices.
- Don’t overcrowd the pan. Cook the ground beef in batches to avoid steaming instead of browning.
- Make it ahead. The ground beef mixture can be cooked and stored in the refrigerator for up to 3 days. Reheat gently before serving.
- Get creative with toppings! Beyond the classics, try adding pickled onions, crumbled queso fresco, or a dollop of Greek yogurt for a tangy twist.
- Use leftover ingredients. Leftover roasted vegetables or shredded chicken can be added to the taco filling for extra flavor and variety.
