Easy Chicken Fricassee

This recipe offers a delicious and creamy chicken fricassee that’s perfect for a weeknight meal.

Ingredients:

  • 2 tablespoons olive oil
  • 1 pound boneless, skinless chicken thighs (or breasts, cut into bite-sized pieces)
  • 1 medium onion, chopped
  • 2 carrots, peeled and sliced
  • 8 ounces button mushrooms, sliced
  • 2 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 cup dry white wine (or chicken broth)
  • 1 (14.5 ounce) can diced tomatoes, undrained
  • 1 1/2 cups chicken broth
  • 1 bay leaf
  • 1/2 teaspoon dried thyme
  • 1/4 cup chopped fresh parsley (optional)
  • Salt and freshly ground black pepper, to taste
  • Cooked rice or egg noodles, for serving

Cooking Guide:

  1. Heat olive oil in a large Dutch oven or pot over medium heat. Season chicken with salt and pepper. Add chicken to the pot and cook until golden brown on all sides, about 5-7 minutes per side. Remove chicken from the pot and set aside.
  2. In the same pot, add onion, carrots, and mushrooms. Sauté for 5-7 minutes, or until softened. Add garlic and cook for another minute.
  3. Sprinkle flour over the vegetables and stir to coat. Cook for 1 minute.
  4. Pour in white wine (or chicken broth) and scrape up any browned bits from the bottom of the pot. Add diced tomatoes with their juices, chicken broth, bay leaf, and thyme. Bring to a simmer.
  5. Return chicken to the pot and stir to combine. Reduce heat, cover, and simmer for 15-20 minutes, or until chicken is cooked through.
  6. Remove bay leaf and discard. Stir in chopped parsley (if using) and adjust seasonings with salt and pepper to taste.
  7. Serve chicken fricassee over cooked rice or egg noodles.

Tips:

  • For a richer flavor, you can use bone-in, skin-on chicken thighs. Brown the chicken skin-side down first, then remove the skin before adding the vegetables.
  • If you don’t have white wine, you can use an equal amount of chicken broth. The white wine adds a bit of acidity that brightens up the flavor of the dish.
  • You can add other vegetables to this recipe, such as peas, green beans, or corn.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
  • To reheat, simmer gently on the stovetop over low heat until heated through.
