Delicious Chicken Fried Rice Recipe

This recipe is easy to follow and delivers restaurant-quality chicken fried rice at home. You can customize it with your favorite vegetables and protein.

Ingredients:

  • 3 cups cooked long-grain white rice (cold and preferably leftover from a day earlier)
  • 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 2 tablespoons vegetable oil
  • 2 large eggs, beaten
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup frozen peas and carrots, thawed
  • 1/2 cup chopped green onions
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce (optional)
  • 1 teaspoon sesame oil
  • Salt and freshly ground black pepper, to taste

Cooking Guide:

  1. Prepare the Rice: This recipe works best with cold, slightly dried-out rice. If you don’t have leftover rice, cook the rice according to package instructions and refrigerate it for at least an hour before using.
  2. Cook the Chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the pan and set aside.
  3. Scramble the Eggs: In the same pan, heat the remaining 1 tablespoon of oil. Push any cooked bits of chicken to the side and pour in the beaten eggs. Let the eggs sit for a few seconds, then scramble them until just set. Remove the eggs from the pan and set aside with the chicken.
  4. Sauté the Vegetables: Add the onion and garlic to the pan and cook until softened, about 2-3 minutes. Stir in the frozen peas and carrots and cook for another minute.
  5. Combine Everything: Add the cooked rice, soy sauce, oyster sauce (if using), and sesame oil to the pan. Stir-fry for 2-3 minutes, breaking up any clumps of rice.
  6. Final Touches: Add the cooked chicken, scrambled eggs, and green onions back to the pan. Stir-fry for another minute or two, until everything is heated through and well combined. Season with salt and freshly ground black pepper to taste.

Tips:

  • Use cold, cooked rice for best results. Cold rice fries better and prevents the dish from becoming mushy.
  • If you don’t have oyster sauce, you can substitute with an additional tablespoon of soy sauce.
  • Feel free to add other vegetables you like, such as chopped broccoli, bell peppers, or bean sprouts.
  • You can also use leftover cooked shrimp, pork, or tofu instead of chicken.
  • For a spicier version, add a pinch of red pepper flakes or Sriracha sauce.
  • Serve your chicken fried rice with your favorite stir-fry sauce or chili garlic sauce for dipping.
