Cheesy Bacon BBQ Monterey Chicken
This recipe combines the smoky sweetness of BBQ sauce, the satisfying crunch of bacon, and the creamy goodness of Monterey Jack cheese for a delicious and comforting dish.
Ingredients:
- 4 boneless, skinless chicken breasts
- 1/2 cup your favorite BBQ sauce
- 4-6 slices bacon, cooked and crumbled
- 8 oz shredded Monterey Jack cheese
- 1 tablespoon olive oil
- Salt and freshly ground black pepper, to taste
- Optional garnishes: diced tomatoes, sliced green onions
Cooking Guide:
- Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
- Pat the chicken breasts dry with paper towels. Season both sides with salt and pepper.
- Heat olive oil in a skillet over medium heat. Sear the chicken breasts for 2-3 minutes per side, just to brown them slightly. This step is optional but adds extra flavor.
- Transfer the seared chicken breasts to the prepared baking dish.
- Spread about 2 tablespoons of BBQ sauce over each chicken breast.
- Top each chicken breast with crumbled bacon and shredded Monterey Jack cheese.
- Bake for 20-25 minutes, or until the chicken is cooked through and the cheese is melted and bubbly. The internal temperature of the chicken should reach 165°F (74°C).
- Garnish with diced tomatoes and sliced green onions, if desired.
Tips:
- For thicker and juicier chicken breasts, pound them gently to an even thickness before cooking.
- Use your favorite BBQ sauce for a personalized flavor. Opt for a smoky, sweet, or spicy sauce depending on your preference.
- Don’t overcook the chicken. It will continue to cook slightly after removing it from the oven.
- If you don’t have Monterey Jack cheese, you can substitute it with cheddar cheese, Colby Jack cheese, or a blend of both.
- Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or microwave until warmed through.
- This recipe can be easily adapted for grilling. Grill the chicken breasts for 5-7 minutes per side, then brush with BBQ sauce and top with cheese and bacon for the last few minutes of cooking.
